Simple to make, melt in the mouth gorgeous and perfect for this time of year. What’s not to like?! Be careful not to overcook, so they retain that little bit of chewiness.

What you Need: 75g/3oz plain chocolate 100g/4oz caster sugar 150g/5oz ground hazelnuts 1/2-3/4 tsp ground cinnamon 1/2 tsp ground allspice 2 egg whites, lightly beaten 50g/2oz icing sugar, plus more if necessary

Method: 1. Pre-heat the oven to 350F/180C/Gas 4. Line two baking sheets with rice-paper (available in packs from the baking section at supermarkets). 2. Melt the chocolate in a bowl over a pan of hot water. Remove from the heat and allow to cool a little before stirring in the caster sugar, hazelnuts and spices, followed by the egg whites. Put the mixture to one side and allow to settle slightly. 3. Sift 2 oz icing sugar onto a plate. Form teaspoonfuls of the chocolate mixture into balls, then roll in the icing sugar. Place the biscuits on the baking sheet, spacing well apart. Flatten slightly with the back of a spoon or your fingers. 4. Bake for around 15 minutes, until just firm. Allow to cool on the tray then break off excess rice-paper. Makes around 18-20 biscuits.
